These spicy shrimp tacos with tangy lime dressing are so simple to make and delicious for a quick healthy meal!
Chop up both kinds of cabbage (or just 1 kind if that's what you have on hand!), dice the jalapeno and cilantro and add all to a bowl with the lime juice, honey and apple cider vinegar. Toss to combine and set aside.
Cube the avocado and also set aside.
Mix the Franks sauce and lime juice into 1/2 cup of sour cream. *If you don't have Franks you could try sriracha sauce or just add some lime and some cayenne pepper or paprika for a zesty sauce!
Rinse and pat dry the thawed shrimp, toss them in the lime juice (so the spices will stick). Mix the spices together then sprinkle over the shrimp and toss to combine.
Spread the olive oil in a pan over medium heat, and lay the shrimp out in the pan so they are all flat! Cook 1-2 minutes then flip them over. Cook an additional 1-2 minutes until the shrimp have curled up and are just opaque or have turned white through the centre. Remove from heat.
Assembly! You can grill or heat up the tortillas in a pan or just warm up slightly in a toaster oven just keep an eye on them so they aren't too crunchy!! Layer in some slaw, top with a few shrimp and avocado and some dressing on the top! Yum! Enjoy for a quick, healthy and easy meal!
