So it was my birthday last week, and truthfully, I’m feeling all of my 30+ years…plus some! January seems to hit like a ton of bricks. It is freezing, days are short, sickness lasts for weeks on end! I just have no energy. So…it’s time…

Time to eat healthier, time to be more active, time to cut back on coffee and couch time! Time to focus a bit more on myself! I’ve had a new exercise I’ve been meaning to start for literally months and can’t make myself do it. I tried week 1 day 1 PRE-TRAINING not even the real program and had I videoed it I could have won the grand prize on America’s Funniest Home Videos. I literally had kids crawling on me, under me, running into me, I was pleading “please just let mommy do her exercises” I even moved my mat to another room mid exercise and one kid still got a bleeding nose from getting hit from all of them flailing their arms…serious…I can’t even make this shit up. Oh…and this was in 6 minutes…SIX MINUTES!!!

Needless to say I’m dreading starting again. However, I think eating healthier just may come first and these shrimp tacos are just the ticket! So easy to make, tons of flavour, and keep me full for more than an hour!

I liked using both kinds of cabbage, the red cabbage tastes sweeter than green so it is a good mix. I like to cut it up fairly fine as it is easier to eat out of a taco!

I typically don’t eat or like tons of spicy food, my husband jokes I think ketchup is spicy but these were very good! You can always add more jalapeño if you like, my first run through I put way more and it was too much for me but I just don’t like breaking a sweat while I eat!

The shrimp doesn’t need to marinate at all but mixing and leaving it sit doesn’t hurt either! I used uncooked and frozen Tiger Prawns in the shells because that was all we could find up where we live, so before using make sure they are thawed, deveined, and shelled! Take the tails off too because no one wants to deal with that in a taco! Rinse them and pat dry and they are ready for seasoning!

I used corn tortillas and loved heating them in a frying pan briefly before stuffing them however the corn tortillas you may need to double up as they seem to crack easily. I wouldn’t hesitate to use small flour tortillas I find they are great as well!

Chili Lime Shrimp Tacos

These spicy shrimp tacos with tangy lime dressing are so simple to make and delicious for a quick healthy meal!

Ingredients

  • 8 Corn tortillas
  • 1 Avocado, cubed

Shrimp

  • 20 Medium uncooked shrimp, peeled and deveined
  • 1/4 tsp Ground cayenne pepper
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Ground garlic powder
  • 1 tsp lime juice *approx 1/4 lime
  • 1 tbsp olive oil

Slaw

  • 1 cup Green cabbage, shredded
  • 1 cup Red cabbage, shredded
  • 1/2 Fresh Jalapeno, chopped finely
  • 2 tbsp cilantro, chopped
  • 1 tbsp lime juice *approx 1/2 lime
  • 1 tbsp liquid honey
  • 1 tbsp apple cider vinegar

Dressing

  • 1/2 cup sour cream
  • 1 tbsp Chili Lime Franks Red Hot
  • 1 tsp lime juice

Instructions

Slaw

  1. Chop up both kinds of cabbage (or just 1 kind if that’s what you have on hand!), dice the jalapeno and cilantro and add all to a bowl with the lime juice, honey and apple cider vinegar.  Toss to combine and set aside.

    Cube the avocado and also set aside.

Dressing

  1. Mix the Franks sauce and lime juice into 1/2 cup of sour cream.  *If you don’t have Franks you could try sriracha sauce or just add some lime and some cayenne pepper or paprika for a zesty sauce! 

Shrimp

  1. Rinse and pat dry the thawed shrimp, toss them in the lime juice (so the spices will stick).  Mix the spices together then sprinkle over the shrimp and toss to combine.

  2. Spread the olive oil in a pan over medium heat, and lay the shrimp out in the pan so they are all flat!  Cook 1-2 minutes then flip them over.  Cook an additional 1-2 minutes until the shrimp have curled up and are just opaque or have turned white through the centre. Remove from heat.

  3. Assembly!  You can grill or heat up the tortillas in a pan or just warm up slightly in a toaster oven just keep an eye on them so they aren’t too crunchy!!  Layer in some slaw, top with a few shrimp and avocado and some dressing on the top!  Yum!  Enjoy for a quick, healthy and easy meal!
