This tender juicy lemon-herb baked salmon is the perfect weeknight meal!  It is prepared all in one pan with your favorite vegetables in 30 minutes or less with minimal prep work!

Lemon Herb Salmon Filet with Wild Rice and Asparagus

With the weather turned nice we have been puddle jumping a lot and spending lots of time exploring outside. My littlest still has afternoons naps so we all get outside late afternoon at best! It has been great, but leaves us crashing back into the house right at supper time when the kids are already starving! Last minute meals are becoming more important, something quick and easy to get onto the supper table!

Salmon is one of those easy to make last minute kind of meals! Think inspiration to in your mouth in 30 minutes or less. There is no excuse about not having enough time for this meal! (unless you don’t have a salmon filet in the house, in which case, that’s a legit reason!)

Lemon Herb Baked Salmon packs so much flavour into the salmon and vegetables that there is no need for any other sauces. It makes this meal not only delicious but also very healthy!

Marinated Salmon Filet and Asparagus

You can replace the vegetables with your favorite, green beans or broccoli work well. I have even made this same recipe without any vegetables inside the foil packet and it works out wonderful too with even more flavour into the fish.

When your oven is heating up just whisk all the sauce ingredients together. Get out a long strip of foil or enough to be able to close and seal it around the filet. Lay your salmon on the foil (did you know that the dull side of foil is the non stick side? Serious, mind blown, I swear I didn’t know that until recently!!) Spread the sauce evenly oven the salmon and add the vegetables all around if you choose to. Close up the huge packet and place in the oven for 15-18 minutes. I opened the packet to test if it was cooked through around 15 minutes and when I did I just left it open and turned the oven to broil to crisp up the top! So easy!

Believe it or not, I swear it tasted even better as leftovers!! I just loved this recipe and can’t wait to try it out foil wrapped on the bbq! If anyone tries it on the bbq please let me know how it goes!

Lemon Herb Baked Salmon

Fresh Salmon filet rubbed with Herbs and seasonings and baked in a fresh garlic lemon dressing until tender and juicy.  Such a quick and easy weeknight meal served with your favorite rice and vegetables!

Ingredients

  • 1 filet Salmon *approx 1 lb or .5 kg
  • 3 cloves garlic finely chopped
  • 3 tbsp olive oil
  • 1/2 tsp liquid smoke
  • 1 tsp parsley flakes
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp Himalayan salt *or 1/8 tsp table salt
  • 1/8 tsp black pepper
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and remove salmon filet from refrigerator for 10 minutes to rest while you prepare the  lemon herb sauce.

  2. Mince the garlic cloves and add all the ingredients to the olive oil including the lemon juice.

  3. Line a baking sheet with foil making sure to have enough foil to wrap up and seal the salmon.  Place the salmon in the centre of the sheet and pour the lemon herb sauce on top and making sure to evenly coat the filet.  Add asparagus or your vegetable of choice around the sides of the filet then tent the foil over top and seal all the edges.

  4. Bake for 15 minutes on the middle rack of the oven.  Open the foil and check if it is done by peeking inside the filet with a fork.  When the salmon is all opaque and not translucent pink it is complete.  I turned the oven to broil 500 for the last 2 minutes just to sear the top but be sure not to over bake. 

  5. Serve immediately with rice and vegetables!
