Bruschetta is a menu item in lots of restaurants which makes you believe it’s fancy or hard to make when really it’s neither! It is INCREDIBLY easy and so delicious. Your guests however will think it’s fancy!

This week has been a busy one!  Back to school week!  The kids are in grade 1 and preschool and have been so excited! (luckily!)  It has also been a very noticeable switch into fall!  Leaves are yellowed, and falling! Also nights are COLD!  We didn’t get frost this week but very close! 

Oh…and pumpkin spiced lattes are out…yep…FALL!  So i’m posting this awesome Bruschetta recipe and it is so delicious.  Secretly i’m drooling over pumpkin everything though so stay tuned for some great fall recipes! lol

This Easy Tomato Bruschetta with Balsamic Glaze is excellent as an appetizer but also was great to have as a “salsa” and I definitely ate it just on toast as well!  It is delicious!

Making Balsamic Glaze 

Making balsamic glaze is literally just putting balsamic vinegar in a pot and simmering it on the stove!  So simple and so delicious.

I simmered it approximately 5-6 minutes until is was about half as much as when I started.  It can be drizzled on all types of vegetables, pork chops, it is excellent on top of cabbage steaks as well!

Toasting Baguette Bread

Just thinly slice a small french loaf and drizzle with olive oil before baking.  You can also season with salt, pepper or garlic seasoning.  Also rubbing a fresh clove of garlic over the bread gives amazing garlic flavour as well!

How to make Bruschetta

Dice up fresh garden tomatoes.  Mince red onion, garlic cloves and basil and add kosher salt and black pepper.  Let it rest for approximately 15 minutes and serve atop toasted baguette crisps and top with balsamic glaze.

Ingredients

Balsamic Glaze

  • 1/2 cup balsamic vinegar

Bruschetta

  • 2 Tomatoes, Large
  • 2 tbsp Red onion, finely diced
  • 2 cloves garlic
  • 1 tbsp minced fresh basil
  • 1/2 tsp kosher salt or to taste
  • 1/4 tsp ground pepper
  • 1 tsp olive oil

Instructions

Balsamic Glaze

  1. In a sauce pan place 1/2 cup balsamic vinegar over medium heat, bring to a simmer and continue simmering for 5-6 minutes until it is reduced by half.

    Remove from heat and pour into a small bowl. Sauce will continue to thicken as it cools.

    Reduce balsamic vinegar on the stove top to create a thick balsamic reduction

Bruschetta

  1. Dice tomatoes finely and place on paper towels to get rid of some of the juices.

  2. Finely chop the red onion, garlic and basil and mix together with tomatoes in a bowl. Add salt, pepper and olive oil and stir to combine.

  3. Top each baguette crisp with a tbsp of bruschetta and a drizzle of the balsamic glaze. Enjoy!
