I've officially found my new favourite healthy lunch! Lime Avocado Egg Salad has zesty lime, sweet shallots, protein packed eggs and creamy avocado on whole grain bread!
dice eggs and set aside
Add all other ingredients to a bowl and mash with a fork until avocado is just slightly chunky.
Add eggs and avocado mixture together and toss gently to combine.
Serve immediately on your favorite bread, in a wrap or wrapped in lettuce leaves.
