Saskatoon berries (or Juneberries if your in the USA) are a delicious little berry well known in our prairie provinces that make the most delicious desserts, tarts and jams! This Saskatoon Pie is absolutely delicious topped with vanilla ice cream!
Add 4 cups thawed saskatoons into a medium sized pot on the stovetop. Add 1/3 cup water and bring to a boil. (more water may be needed if using fresh saskatoons)
Whisk together sugar and cornstarch and add to berries, stir until sugar is dissolved and mixture looks clear. Approximately 1 minute. Remove from Stove.
Add butter, lemon juice and almond extract and stir until butter is melted. Let cool.
Preheat oven to 425 F.
Roll out bottom pie dough and place into a 9" pie plate.
Add Saskatoon filling to the pie. Top with second pie dough.
Fold edges under and crimp the edges. Score the top of the pie to let steam release. Brush with egg wash. (1 egg whisked with 1 tbsp water)
Place in the oven between 15-18 minutes or until the top is golden brown.
