I don’t think there is anything that brings me back to my childhood more than this delicious prairie berry.  This Saskatoon pie had me swooning!

I remember as a child being able to walk through the bushes and pick saskatoons off the short shrubs. On a good year we were able to pick pail fulls and take them home for canning.

I guess as a toddler I was unadventurous with food because I remember eating the same thing, without complaints, every. Single. Day! Mushroom soup, a cheese sandwich and for dessert, saskatoons with ice cream!

Obviously I’m a Saskatoon fan but they don’t grow everywhere and saskatoons (Also called Juneberries if you live in the USA!) are similar to blueberries.  (not so much in taste as in size) You can swap out frozen saskatoons for frozen wild blueberries for another delicious fruit pie! After several years up north with no saskatoon bushes, when my sister-in-law offered to pick me a few pail fulls I definitely took her up on the offer!

Those frozen berries have been hidden away in my freezer for the perfect use and this week was THAT week!!

Making the Best Saskatoon Pie

I adapted this recipe from Riverbend Plantation’s recipe here.  I wanted to use more berries and less sugar and it turned out amazing!

I let the berries thaw in the fridge for several days. If you are using fresh saskatoons you’ll only need to rinse them off.

Place berries in a medium pot and add the water. For fresh berries you will need approximately 1/4 cup more water.

Bring to a boil and add cornstarch/sugar mixture, mix until the liquid looks clear, approx 1 minute and remove from the stove top. Add lemon juice, almond extract and butter and mix until butter is melted. Let it cool down before filling your pie shells. I placed mine in the fridge for a day before completing the pie because I was busy! It still worked perfect but cold filling will increase your bake time by about 5 minutes.

Saskatoon Pie

Saskatoon berries (or Juneberries if your in the USA) are a delicious little berry well known in our prairie provinces that make the most delicious desserts, tarts and jams! This Saskatoon Pie is absolutely delicious topped with vanilla ice cream!

Ingredients

Saskatoon Pie Filling

  • 4 cups Fresh or Frozen Saskatoons, thawed
  • 1/3 cup water
  • 2/3 cup granulated sugar
  • 3 tbsp cornstarch
  • 2 tbsp lemon juice
  • 2 tbsp salted butter
  • 1/2 tsp almond extract
  • 1 recipe Double Pie Crust. (one for bottom one for the top)

Instructions

Saskatoon Pie Filling

  1. Add 4 cups thawed saskatoons into a medium sized pot on the stovetop. Add 1/3 cup water and bring to a boil. (more water may be needed if using fresh saskatoons)

  2. Whisk together sugar and cornstarch and add to berries, stir until sugar is dissolved and mixture looks clear. Approximately 1 minute. Remove from Stove.

  3. Add butter, lemon juice and almond extract and stir until butter is melted. Let cool.

  4. Preheat oven to 425 F.

  5. Roll out bottom pie dough and place into a 9" pie plate.

  6. Add Saskatoon filling to the pie. Top with second pie dough.

    Lay second pie dough round on top of the filling and fold the edges under before crimping to make a thicker crust
  7. Fold edges under and crimp the edges. Score the top of the pie to let steam release. Brush with egg wash. (1 egg whisked with 1 tbsp water)

  8. Place in the oven between 15-18 minutes or until the top is golden brown.
